The “Traditional Sindhi Kadhi”

Wow, finally I have a very exciting food recipe to share with you today!

Being a Sindhi, I’ve brought to you the most popular, authentic & mouth-watering Sindhi dishes – The “Traditional Sindhi Kadhi”. You must try!! 😉

Sindhi Kadhi also known as Kadhi Chaawaran is easy to cook, and can be made in large quantities for serving guests at home or at weddings.

This tangy besan-based curry is a staple Sindhi dish made in every Sindhi household, cooked with lots of assorted vegetables and rice. This kadhi tastes best with steamed rice, crisp double fried potatoes, cluster beans, drumsticks and boondi.

Preparation Time: 10 mins  Cooking Time: 25 mins Total time: 35 mins Servings: 4

Ingredients

  • 3 to 4 tbsp Besan (gram flour)
  • 1/4 cup cluster beans (gavarfali)
  • 1/2 cup potatoes peeled and cut in small chunks
  • 1/2 tsp mustard seeds
  • 1/4 cup ladies finger (bhindi), cut into 4 long pieces
  • 1/2 tsp cumin seeds (jeera)
  • 1/4 tsp asafoetida (hing)
  • 1/2 tsp fenugreek (methi seeds)
  • 1 tsp grated ginger (adrak)
  • 7 to 8 curry leaves (curry pata)
  • 2-3 green chillies (chopped)
  • 1/4 tsp turmeric powder (haldi)
  • 1 to 2 tsp chilli powder
  • 2 tomatoes (chopped and grated)
  • 1 to 2 tbsp tamarind (imli) pulp
  • 2 tbsp oil
  • Salt to taste

The Method

  1. Boil cluster beans and potatoes in enough water till they are tender. Keep aside, retaining the water.
  2. Soak tamarind in water for some time and mash with hand. Use paste and discard pulp.
  3. Heat 1 tbsp oil in a broad non-stick pan. Add ladies finger and saute for 3-4 minutes. Drain and transfer bhindi to plate.
  4. Add remaining oil in pan with cumin and fenugreek seeds. When it crackles, add asafoetida.
  5. Add besan and cook it on low to medium flame while constantly stirring it for 5 minutes.
  6. After flour turns brown in color, add red chilli powder, and grated tomatoes.
  7. Add 4 cups of water and bring to a boil.
  8. Now, add turmeric powder, green chillies, ginger, curry leaves, and salt along with cluster beans and potatoes.
  9. Simmer till kadhi becomes thick.

Serve this Traditional Sindhi Kadhi hot with plain steamed rice.

Optional: You can also add aloo took (crisp deep fried potatoes) and sweet boondi
